IAN: Thursday 9/12/2024 Chex Mix Crumbs and Chicken [1]

I left this until too late tonight. Bill had a new intravenous line inserted with a pump to give him 6 weeks of a strong antibiotic for a lesion on his neck that won’t heal. So there was back and forth to the medical center and then medications delivered, then a home nurse came in to teach us how to change the medical sack every 24 hours as it gets used up. Its been a day. I had plans to expand on the little blurb below that I wrote earlier but what can I say? Add to that, the image library is not letting me see much so the picture for this is what I had a choice of.

As you can see by Itzl's concerned look, this group is for us to check in at to let people know we are alive, doing OK, and not affected by such things as heat, blizzards, floods, wild fires, hurricanes, tornadoes, power outages, or other such things that could keep us off DKos. If you're not here, or anywhere else on DKos, and there are adverse conditions in your area (floods, heatwaves, hurricanes, etc.), we are going to check up on you. If you are going to be away from your computer for a day or a week, let us know here. We care!

Do you make Chex Mix? I have mentioned that I do in earlier diaries. I may have given you my mid 50’s recipe, which is very different from the new ones online . Anyway, if you make Chex Mix, you always end up with a lot of crumbs when you are finished. I have always wanted to use them to bread chicken nuggets. So last night, I did. I dredged chicken bites in flour, then egg/milk mix/then rolled them in the crumbs. I deep fried them for a couple of minutes. They were yummy, more seasoned than the panko crumb crust. I suggest it if you fry chicken bites and have left over Chex Mix debris.
