National Pizza Day, like other ‘national” days seems anomalous for what is a very local food product that’s always “just-in-time” unless you eat cheap frozen ones. I probably ate too many in college and doing keto-friendly, gluten-free, low-glycemic (paleo?) pizza does seem a bit of a stretch, although the still pricey substitute products seem to work with plant-based Mozzarella, vegetables, and cauliflower, chickpea or almond bases. Even so, this one seems optimal if I can get the component substitutes worked out: The standardized Glycemic Index ranges from 0 to 100. Zero-glycemic foods—those without carbohydrates—include items like meats, fish, and oils. Pure sugar has a glycemic index of 100. Low-glycemic foods have a glycemic load of 55 or lower and include most fruits and vegetables, beans, dairy, and some grains. Foods such as bananas, raisins, and sweet potatoes are considered to be medium-glycemic foods and are ranked between 56 and 69.
