Top Comments: How Long Did Your Leftovers Last Edition [1] ['This Content Is Not Subject To Review Daily Kos Staff Prior To Publication.'] Date: 2023-11-27 Between Black Friday, Small Business Saturday, Secondhand Sunday (I had no idea until I googled that it had a name!), Cyber Monday and tomorrow’s Giving Tuesday, it’s almost hard to remember that last Thursday was Thanksgiving aka the day when at least here in MA most stores are closed. Casa Brillig had a wonderful time hosting Friendsgiving — we all made food and everyone, no matter what their dietary needs and limits were, had a full plate. There was great conversation, K2 and my twin godsons spent hours playing games I’d forgotten we had in the cabinet, and everyone went home with leftovers in the spare containers I’d saved over the course of the year. (No containers to return, yay!!) Even with all of that food entering and then LEAVING the house, we still had a lot at the end of the evening. We’d cooked two turkeys (roasted and smoked) so had almost an entire breast’s worth of light meat and lots of dark, K2’s favorite. We had mashed turnips and brussels sprouts and stuffing and gravy and lots of cranberry sauce. Oh, and at least three different desserts! So for the past several days we’ve been eating leftovers in a variety of combinations. Of course we made turkey stock with the roasted bird carcass, and it’s already in the freezer for soup this midwinter. One of our favorite ways to use leftover stuffing is by making “Stuffles”… mash up some stuffing with an egg (and maybe some diced turkey) and use your waffle iron to make a stuffing waffle. Pour gravy over it, add a side of cranberry sauce, and you’ve got a delicious meal! However, as of last night we were out of breast meat, and K2 was murmuring that he’d ‘had enough turkey’. So tomorrow I’ll be trimming the rest of the dark meat off the bones for freezing (that soup I mentioned?) and the leftover cranberry sauce will go into the freezer as well. We went with good old-fashioned pasta (or keto-substitute pasta) and meat sauce tonight, and the taste change was welcome. How long did your leftovers last?
