I can start up a _bunch_ of apps on a 2 meg Mac (I just have to be selective
   about what I launch).

How about Word 4, Excel, and HyperCard? Not an unreasonable request
since they are bread and butter apps. System 7 will allow IAC, so one
should be able to do useful things with these three programs.
Actually, IAC should allow for a lot of "neat" things. I'll need Word
4, PageMaker, and Illustrator open at once.

   >try to do anything useful while formatting a disk. Ask him why he can't run

Yeah, that is a substantial criticism. I mean really, how OFTEN do you need to
format a disk? It is nifty to be able to do so and run another task, but it
just as easy to format a bunch at once and then go back to work.

Ok, how about copying files b/w floppies, or backing up your hard disk
to floppies?

Get a new source for your Mac info. MultiFinder runs just fine on the Classic.

How well does System 7 run?
