I'd be interested in this, too.  I've been working on a moria port
in my spare time for a while and decided it would look nicer and
possibly be easier to write if I forgot about writing curses and
instead rewrote misc?.c and io.c in a more Mac User Interface manner.
The big problem I'm facing is the huge amount of external data (the
treasure and monster tables) and how to reasonably cope with them.
I wish ResEdit had a TMPL field for fixed-length 'C' char[]'s...
