Whole wheat waffles ------------------- 2c whole wheat flour 2 1/4c whole milk 2 large eggs 1/2c melted butter or oil 4t baking powder 1t salt Yield: 6-7 6in waffles 1. Mix flour and milk just until flour is wet. Set aside and let stand for 10 minutes. 2. Beat eggs until light in color. 3. Add eggs, butter or oil, salt, and baking powder to flour/milk mixture. 4. Mix just until a smooth batter is formed. 5. Cook on waffle iron per manufacturer's directions. Note: Substitute up to half wheat flour with oat flour. Reduce milk by 1/4c for every 1/2c oat flour used. Consider soaking flour and milk mixture for 10 additional minutes to allow oats to soften. Note: Substitute 2/3c + 1.5T powdered milk and 2c water for whole milk, if desired. Waffles will be slightly drier. (c) 2020-1 Tom Canich .
