No Bake Peanut Chocolate Raisin Oat granola bars **This one is still a work in progress** 3/4c old fashioned oats 3/4c salted cocktail peanuts 1/2c natural peanut butter 1/2c raisins 2T coconut oil 1T dutch process cocoa powder 1t salt cayenne pepper to taste 1. Toast the oats in a skillet over medium heat until just browning. Add cayenne pepper and salt. Toast about 1 minute then remove from heat. 2. Combine peanut butter, cocoa powder, and coconut oil in saucepan over medium low heat. Stir occasionally until mixture melts into a consistent liquid. 3. In a suitable work bowl, combine oats, raisins, peanuts with peanut butter mixture. Stir to coat thoroughly. 4. Dump mixture into a 9x9in baking dish lined with wax paper. 5. Chill in refrigerator until solidified. Cut into squares and enjoy! Notes: As written 2019-11-04 the end product is very oily and wet. Suggest increasing oatmeal to 1c, reducing peanuts to 1/2c. Notes: Goal is to add unsweetened shredded coconut but I'm the lone member of the household who will enjoy this. Plan is to substitute coconut 1:1 for oatmeal.
