Apple plum cake made with oat flour ---------------------------------------- Gluten free **Note: this recipe is still in development** 3/4c oat flour 1/4t salt 1/2t baking soda 1/2t baking powder 1/4t ground nutmeg 1/2t ground cloves 2t ground cinnamon 1/2t ground ginger 2T flax meal 1/2c chopped prunes 1 egg + sour cream to make 1/2c 2T melted butter 1/2c apple sauce 1t vanilla extract 1T brandy Yield: 3 5x3in cakes 1. Chop prunes and place in small bowl. Cover in brandy, vanilla, and water to hydrate. 2. Preheat oven to 400F. 3. In a medium bowl, mix oats, baking powder, baking soda, salt, spices. 4. Beat egg until light in color and mix with sour cream, apple sauce, and flax meal. 5. Mix wet ingredients with dry to make a batter. 6. Pour batter into greased ramakins. 7.
