@jojo @georgia Just do it, not much that can go wrong. If you somehow mess up and don't have a desktop environment installed, just hit Ctrl+Alt+Fx where x is some function key number from 1-7 to get into a terminal, your de/display manager is normally on F1, F2 or F7. From there, log in and fix everything.

@jojo @georgia You can do sudo apt remove ubuntu-desktop, then you will be able to restore everything by reinstalling, or you could do sudo apt purge ubuntu-desktop to irreversibly remove all configuration files along with it.
