I do have several Michelin Bib hawkers in my extended family, including a wanton noodle shop, so I suppose it was only a matter of time before I got into it (out of desperation)Noodles for breakfast for the second day this week. Woke up near Mt Shasta. I fell asleep in the dining car / observation lounge of the Coast Starlight. It was vastly superior to trying to lie flat across three seats on a plane in economy class, in the rare chance there were three seats open that you could move to. What’s for breakfast: Chinese tomato eggs but with cherry tomatoes with a huge amount of sambal matah, on top of Filipino style garlic rice I’m subbed out the eggs for Just Egg, which works well tooMy sauce is like, half sambalIf you don’t have sambal matah, you can also use the Lao gan ma tomato chilli jar. Just don’t use the rooster brand sambal oelek, that makes everything too sour to me#Food #Vegan #Rice
