The real annoying part was I was adding sugar bit by bit to add the actual minimal amount- I could have added less sugar if I remembered I only needed to reach 218F

Water can't go over boiling temp of water (lol) so the precise amount of sugar you add is exactly as hot as you can get

@AlienSkyler If you can’t find hibiscus, cherry is fine, but hibiscus is really delicious and you can often find it in Hispanic or international stores
