My first attempt at baking 4-cheese, jalapeno, sausage balls.Recipe:1 small bag each - grated pepper jack, yellow cheddar, colby and mozzarella cheese1 pound - ground spicy Italian sausage1 small jar - sliced jalapeno peppers1 box - Red Lobster Cheddar Bay biscuit mix (Bisquick Complete will do in a pinch)Olive oilButter-------------------------------------------------------------Dice jalapenosDust large mixing bowl with biscuit mixPlace sausage in bowlPour in 2 tablespoons olive oilAdd 4 to 6 tablespoons of jalapenos (depending on hotness desired)Add 1/3 cup each of the 4 cheesesAdd full bag of biscuit mix, as well as small flavor packet mixMix thoroughly by hand for several minutesCover 2 baking trays with parchment paperRoll mixture into golf ball sized balls and place on trays an inch or more apartPlace in pre-heated 375 degree oven for 15 to 20 minutesAfter 10 minutes, drizzle melted butter over top of balls and let finish cooking

By the way, my mom used to make similar ones years ago. She used a flaky pastry dough instead of Bisquick (or RLCB mix), and didn't include jalapenos. They came directly from the old Betty Crocker master cookbook.
