@shansterable @futurebird I've been baking for years without eggs. Bananas are a good substitute. But you can also use Xanthum Gum, tapioca flour(arrowroot), and glutinous rice(which has no gluten). I also do gluten and dairy free as well. Suprisingly works really well. My daughter makes amazing gluten, dairy and egg free raspberry muffins using this stuff. Glutinous(sticky) rice flour is the magic ingredient though. Usually can get it fairly cheap at an asian grocery store. Substitute 1/2 cup of your normal flour for this, and add a little more liquid to the batter - a little more milk and a dash of oil/butter to stop it getting too dry.

@futurebird @shansterable argh, that sucks. I'm mildly allergic to peanuts, but not tree nuts, so that does make it easier. Navigating through allergies is very hard (it's why I'm also not vegan - too many allergies in the house). On the meringue, any bean liquid will work if there is one that is safe - I haven't tried the alternatives yet myself, but canellini and kidney beans are meant to work too. Eggs are really hard to replace well. Sometimes you can use tofu(scrambled), sometimes bananas(pancakes), glutinous rice flour(baking), or mixes of xanthum gum and arrowroot(also baking). Maple syrup+ milk/substitute for egg wash works too (though any liquid sugar would probably also work). I would never have bothered doing any of this discovery if I hadn't developed a serious egg allergy. Going with powdered egg if it's cheaper is probably not a bad idea if you can do it. (Glutinous rice flour is what is used to make daifuku, it's how we found it. It's my kids favourite dessert.)

@futurebird Never Too Small is an Australian YT channel that focuses on apartment design. Simple Dwelling often has profiles on apartments too. Living Big in Tiny House focuses on Tiny Homes, but has great ideas for small space configurations. I used to read a lot of Apartment Therapy, but haven't for a while now, so I don't know what they are like post-AI. NB. Having recently gone through a kitchen/bathroom renovation in an apartment, agree that it was very hard to get advice, or even find a company willing to do it. (We did eventually find an amazing company that were pretty much flawless, and specialised in apartment renos - but unless you are in Australia, probably not terribly helpful.)
