@stjaerna @tea there are two likely culprits: amino acids and polyphenols. A few amino acids actually taste sweet or sweet and umami like glutamine and proline. The sweet aftertaste of tea (hui gan) has been linked to non-galoylated catechins like EGC. That chestnut smell comes from the Maillard reaction which requires sugar + amino acids + heat. All of this requires the perfect combination of growing conditions, genetics, and skilled processing—AKA magic!

I'm moving across the country soon and I've got things to get rid of. The weirdest of them is the contents of my worm compost bin. Is a cubic foot of worm poop and a couple hundred worms a thing someone would want in October in New England? Probably not.#vermicompost #compost #moving
