       Place over boiling water, being sure that boiling water does not touch the bottom of the top pan.(If this happens, it could cause your frosting to become grainy).Beat constantly on high speed with electric mixer for 7 minutes. Beat in vanilla.

       This 7 minute icing is a family favorite for chocolate and Devils Food cakes.Many birthday requests for this icing.What I can say is its like inhaling a sugar cloud.My Mother always let me lick the beaters!

       @RockyRoad Well all I can say is, it's cooked over boiling water for so long.I can assure you that in many decades of absolutely inhaling this icing, even days later, there has never ever been a problem with getting sick from it.I love it cold, but there is no room in the fridge right now.    So you can keep it at room temperature.I put the cake in a cake carrier and it's outside in my car right now, where the temperatue just happens to be 44 degrees.   Car fridge!

       @RockyRoad The icing is super hot after you make it, so if there's room in the fridge or freezer, I will put the pot inside to cool it off faster.    I always make the icing first, before the cake, for this reason.

       @DeplorableTigerfan Thank you for the great tips!After 7 minutes have passed, turn off the electric hand mixer and dip into top and lift off the icing with the beaters.    You want to see stiff peaks form.If the peaks fall, keep mixing for a few more minutes.

       @RandomVagaries Thank you so much for your inspiring comment!The mold is surprisingly easy to clean if you prepare it first.I lightly used "Baker's Joy", a flour spray for preparing baking pans.Then sprinkled Hershey's cocoa with an OXO baker's dusting wand, since the Baker's Joy is white and the cake is dark brown.Put into sink and soaked for 5 minutes in hot water and Dawn Platinum.   Then used a toothbrush to brush away anything left.   Then a quick rinse.   Easy peasy.

       @StevenDouglas Well I bought it specifically for your recipe.I didn't see where you specified the size of loaf pan you use.  There are many sizes of loaf pans.   And it needs to fit the recipe. Guessed that it was probably a 9x5 inch.  Knocked around in cabinets trying to see if I had one, and found a 9x5, but boy it was real beat up.So to Amazon I went and while perusing loaf pans, this jewel showed up out of nowhere.  Decided to take a chance.Turned out almost too good to be true!

       @Lemonhead Thank you!I think this will be good to take to someone under the weather or if there's a death in the family or a birthday with Breyer's vanilla ice cream- when the person would really appreciate someone making them a real cake.   Homemade cakes are kind of a lost art.Occasions where something elegant and simple and chocolate is appropriate.   I think it would spread happiness.I have never seen anything quite like this before.

       @Stacie @Lemonhead @JM Form a crust on the outside?Yes and no...this icing is very sensitive to humidity and water content.If the humidity is high, you can add less water than the recipe calls for.  The icing I made Saturday night still hasn't formed a crust.   Humidity here is 81%.  It's been outside in my car in a cake carrier because my fridge has no room and it's been cold here.This icing has a mind of its own, but either way, it's all good!

The batter literally sloshed in the pan when I put it in the oven.I had to go back and check the recipe again to make sure."Is it a total of 1/2 c milk PLUS the hot coffee?"No.   It's 1/2 cup of either milk OR coffee.   I used coffee instead of milk.

       @Rock @StevenDouglas No I think you're right after all.The boiling water or hot coffee is in addition to not instead of the milk.   Had to go back and read the recipe again. I think it will turn out right.Keep checking with a toothpick until it comes out clean.Please let us know how it comes out!

       @Stacie @Lemonhead @JM Yes you are right, 7 Minute Icing can definately form a thin shell.It is somewhat unpredictable, perhaps because of the weather/humidity.Deplorable Tiger fan shared this great suggestion:"One tip for those living in a humid climate like here in the deep south, cut back on the water to just a couple of tablespoons."The humidity here right now is 95%, the cake I iced Saturday night that is outside in a cake carrier in the car has still not formed a shell.
