I would love to attach a big honkin hard drive to a Raspberry Pi and have it operate as a node. I deal with computers day in and day out, but I have no idea about this particular function

@TheRedWarlock Raspberry Pi 5 coming out. You could look for a RAID-1 mirror device that attaches via USB-3.
