In a nutshell, using VM's and containers allows you to have something working, when you wanna tinker, you can snapsot the current config (i.e. backup) do some tinkering, break it, restore snapshot and carry on like it never happened. you can also run different oses in the vm as it's virtualising the entire machine not just the application level. I haven't used ESXi but I do use Proxmox at home, I think I read that you can now get that for Pi's but I don't remember where I read that so might just be crapola. I also use OpenNebula (but that's for work).
