So not NVME but a SATA drive - still much better than a stick or the SD card. I read somewhere that the UEFI boot can be put on the USB drive now (doesnt need to be on the SD card) so I may try it out and see if I can do it. (I also recall reading from the ESXi install that the UEFI boot cannot be on the same USB device as ESXi, but I dont know if I read that incorrectly - doenst make sense to me). ESXi can boot from the SATA, so that part is OK. BTW: I also discovered that somebody wrote a module to get expose the Pi's tempurature - but I cannot get it to install, so I may try with that as well since I see there is an ESXi build update since I installed. ....лоеп ....
