Two comments to consider:

It is really hard to hire anyone at minimum wage.  We can't even hire kids in kids training approved roles at much less than 1.5x to 2x minimum.  Somewhat makes the whole minimum wage concept moot in practice.

Unfortunately we do not have an opportunity to run businesses without the government as a silent partner taking its monetary share, and overwatch/policeman regulating most aspects.  When you move from paper to practice, you find you are stuck with lots of government.
