MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Mexican Turkey Lasagna Categories: Mexican, Poultry Yield: 6 servings 1 lb Ground turkey, cooked/drain 15 oz Can tomato sauce 15 oz Can whole kernel corn, drain 10 oz Jar picante sauce 1 pk Chili or taco seasoning 2 ea Eggs, slightly beaten 1 lb Cottage cheese 1/4 c Grated Parmesan cheese 1 ts Oregano or Italian Seasoning 1 x Salt/pepper to taste 1/2 ea To 1 tsp. garlic salt 10 ea To 12 corn tortillas 1 c Shredded cheddar cheese Mix turkey, tomato sauce, corn, picante sauce and chili or taco seasoning and simmer 5 to 10 minutes. Meanwhile, beat eggs and combine with cottage cheese. Parmesan cheese, oregano, salt, pepper and garlic salt. Lightly grease a 13 by 9 by 2 inch baking pan, line pan with 6 tortillas up sides and overlapping as necessary. Pour 1/2 of meat mixture over tortillas, spread evenly, then spoon all the cheese mixture over the meat. Layer with the rest of the tortillas, then the rest of the meat.
