CTRL-Z is the standard for "UNDO".
SHIFT-CTRL-Z is "REDO"

Some programs have many levels of both, some only one, and in some the 
buffer is cleared when you save, others not.

How much it will undo or redo varies -- pretty much every time you hit a 
key that's not a letter, it resets the how-much-at-a-time amount. New 
buffer.
