I thought Enterprise actually had some interesting plots and episodes, and it seemed to be picking up in season 4.  I would have been curious to see more of the show.  And more recently, I've heard they were going to supposedly show a refit Enterprise NX-01 with a secondary hull, which would have looked more like the Constitution class and other ships that came later.
