Never taken to the Boarderlands series of games, played a bit of borderlands 1 on easy as anything else seem to require better twitch reflexes than I have.

I didn't have any issues the The Outer Worlds though... its been a while but I seem to recall that you can usually sneak up on your targets from a nice safe distance & take them out without much difficulty. It has been a while since I played it though.
