Apache is a pretty monsterous beast - Personally, I'd look into nginx or Caddy
for this task. They are both dead simple to configure for subdomains and the
like. Caddy (maybe nginx at this point?) has the advantage of built in ACME
clients so you can get Let's Encrypt going (if needed) with almost zero effort.
