E.g., Kosher, Halal, no-red-meat, no pork, etc. When I went vegetarian, I first cut out beef, mostly because of reading about how a certain bacteria colonizes human intestines of those who frequently eat red meat, and that bacteria consumes the meat while releasing something nasty into the blood. Though "red meat" also includes pork, I think, for this, so I probably should've cut out more, for that. But the whole aspect of, "it's not just your body, it's all the bacteria that live in and on you" is fascinating, and in the case of red meat, a little bit scary. And, yeah, could probably also add "Catholic during Lent", and probably a variety of health conditions, etc. (And hopefully this does not count as talking about religion; not meaning to talk about the religions; just diets.
