There can be a lot of regional difference in Indian dishes.  There's also the
thing where a lot "curry" is a secret recipe that belongs to a family more or
less. So even in the same region the secret herbs and spices can vary wildly.

Originally a standardised curry, was English :) It wasn't neccessarily the
best but they all tended to be pretty similar.
