I am guessing the difference is that the "pancake" syrup is processed and
sweetened, where the ahornsirip maybe is not.

When I think of places in the US to get real maple syrup, I would think of
northern tier states, like Michigan, + New England so I am not too
surprised it was good.

Well, those places and Funk's Grove, Illinois.  :)
