Especially if it is made with GMOs.  I have heard a few folks claim that
the use of GMO wheat is what causes so many people to have gluten problems

Back in the late 1990's, I visted a restaurant in Knoxville, Tennessee.  I
think it was called Kalamata Kitchen.  They prepared some sort of appetizer
with portabello mushrooms that tasted a lot like steak... maybe even a
little better than.

I have never been able to find them prepared quite that way since.
