I was running my server on 16Gb of ram until about two months ago. It was
running 5 vm's full time, one 8gb for the NAS, three at 2Gb, and the last
at 1Gb.

Wasn't a issue at all.

I've now done some software upgrades (Esxi v5 to v6.5) and added another
16Gb of ram..
