I'd think "poTAYto" and "toMAYto" are the correct way, due to the rules of English vowels. In each word, after the 'a', there's a consonant followed by a vowel, which would make the 'a' be pronounced "ay". I've seen this kind of thing with other words too. Years ago, there was a chat program I saw some people use called Adium. I'd pronounce it "AY-dee-um", but I'd hear some people pronounce it "add-ee-um".
