I'm one of those purists, now. Carbonara shouldn't have cream, and pancetta 
if you could find it is a marked improvement over bacon.

I stopped adding cream and rely on a good parmagiano reggiano cheese and the 
egg yolks for the creaminess.

It's one of the simplest, yet satisfying dishes.
