      Title: Classic Egg Salad
 Categories: Eggs, Vegetabes, Breads. cit
      Yield: 2 servings
 
      3 tb Mayonnaise
  1 1/2 ts Prepared mustard
    1/8 ts Salt
    1/8 ts Pepper
    1/8 ts Lemon juice
      3 lg Hard-boiled eggs; coarse
           - chopped
      1 tb Minced green onion
      2 sl Bread
           Diced tomato; opt
 
  Mix the first 5 ingredients. Stir in eggs and green
  onion. Serve on bread. If desired, top with tomato.
