In a small oven-proof skillet, heat oil over medium heat. Sprinkle chicken with salt and pepper. Brown chicken, 2-3 minutes on each side. Combine soy sauce and brown sugar; brush over chicken. Transfer skillet to oven. Bake 15-20 minutes. Meanwhile, in a large saucepan, heat canola and sesame oils over medium heat. Add mushrooms; cook and stir until tender, 3-5 minutes. Add garlic and ginger; cook and stir 1 minute longer. Stir in broth, soy sauce and mirin; bring to a boil. Reduce heat; cover and simmer 10 minutes. Add bok choy. Cook, uncovered, for 5 minutes. Add noodles. Discard seasoning packets or save for another use. Cook, uncovered, until noodles are tender, 5-7 minutes. Cut chicken into slices. To serve, add noodles, mushrooms and bok choy from saucepan to 4 individual serving bowls. Ladle desired amount of broth over noodles. Add sliced chicken and toppings.
