      Title: Sausage & Vegetable Skillet Dinner
 Categories: Poultry, Potatoes, Chilies, Herbs, Greens
      Yield: 4 servings
 
      1 tb Olive oil
     12 oz Fully cooked Italian chicken
           - sausage links; in 1" pcs
      1 lg Onion; chopped
      3 cl Garlic; minced
    1/4 ts Crushed red pepper flakes
  1 1/2 lb Red potatoes; thin sliced
     10 oz Box frozen corn
    1/4 ts Pepper
  1 1/4 c  Vegetable broth
      2 c  Fresh baby spinach
 
  In a 12" skillet, heat oil over medium-high heat; saute
  sausage and onion until onion is tender. Add garlic and
  pepper flakes; cook and stir 1 minute.
  
  Add potatoes, corn, pepper and broth; bring to a boil.
  Reduce heat to medium; cook, covered, until potatoes are
  tender, 15-20 minutes. Stir in spinach until wilted.
