Daily Recipe 259 To : All From : Dave Drum Date : Wed Nov 29 2023 16:52:23 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Erin French's Meat Loaf Categories: Beef, Pork, Vegetables, Breads, Herbs Yield: 12 servings 2 c Bread cubes in 1/2" dice 1/2 c Whole milk 2 lg Eggs, lightly beaten 3/4 c Grated carrots 1/2 c Chopped shallots 1/2 c Grated pecorino cheese 1 1/2 lb Ground beef 1 1/2 lb Ground pork 2 tb Fresh thyme leaves 2 ts Kosher salt 6 (to 8) twists of a pepper - grinder MMMMM---------------------------GLAZE-------------------------------- 3/4 c Ketchup 1/2 c (packed) light brown sugar 1 tb Dijon mustard Set the oven @ 375ºF/190ºC. In a large bowl, add the bread cubes, whole milk and lightly beaten eggs. Mix to combine and allow to soak while you prepare the remaining meat loaf ingredients. To the bowl, add the grated carrots, chopped shallots, pecorino cheese, ground beef, ground pork, fresh thyme, salt and pepper. Mix with your hands until combined. Do not overmix! You don’t want the finished meat loaf to be tough. Divide the mixture between two 9" x 5" loaf pans and set aside. In a medium bowl, stir together the sugar, ketchup and mustard. Brush the top of each meat loaf with a thick coat of the glaze. Transfer to the oven and bake until an instant-read thermometer inserted in the middle registers 150ºF/66ºC, about 45 minutes. Let the meat loaves rest for 10 to 15 minutes, unmold from the pans, cut into slices and serve.
