      Title: Sweet 'n' Spicy Chicken
 Categories: Poultry, Salsa, Fruits, Rice
      Yield: 4 servings
 
      3 tb Taco seasoning
      1 lb Boned, skinned chicken; in
           - 1/2" dice
      2 tb Canola oil
  1 2/3 c  Chunky salsa
    1/2 c  Peach preserves
           Hot cooked rice
 
  Place taco seasoning in a large shallow dish; add
  chicken and stir to coat.
  
  In a large skillet, brown chicken in oil until no longer
  pink. Combine salsa and preserves; stir into skillet.
  Bring to a boil. Reduce heat; cover and simmer for 2-3
  minutes or until heated through. Serve with rice.
