      Title: Coffee Risotto
 Categories: Rice, Citrus, Dairy
      Yield: 2 Cups
 
      1 tb Instant coffee powder
    1/2    Orange; shredded zest, juice
    1/2 c  Arborio rice
      2 c  Milk
      2    Drops vanilla extract
    1/2 c  Sugar
      2 tb Butter
    3/4 c  Heavy cream
      3 tb Rum; (opt)
 
  Aromatic arborio rice, coffee, and orange juice make an
  irresistable risotto for a deliciously different dessert.
  A bit of rum adds a burst of flavor, but you may omit it,
  if you wish.
  
  Put the coffee and orange juice in a saucepan with 1/2 cup
  of water and bring to a boil. Remove from heat, add the
  rice and let soak for 5 minutes.
  
  Return the pan to heat and add the milk and vanilla
  extract. Cook over low heat until rice is tender, but
  still slightly firm to the bite.
  
  Remove from heat, add sugar, orange zest, butter, cream,
  and rum (if using); stir through gently and serve at once.
  
  Yield: 2 cups
