Subj : 7/24 Nat'l Tequila Day 4 To : All From : Dave Drum Date : Fri Jul 22 2022 11:31:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Shrimp w/Tequila Lime Cream Sauce Categories: Seafood, Vegetables, Citrus, Booze, Dairy Yield: 4 Servings 3 oz Butter 2 oz Olive oil 1 c Onion; diced 1 tb Crushed red pepper 4 oz Tequila 1 1/2 lb Jumbo (U-15) shrimp; peeled, - deveined 2 ts Lime zest 12 oz Heavy cream or crema 1/4 c Lime juice; from one whole - lime 1/2 ts Salt; to taste 1 ts Black pepper; fresh ground 1/2 c Fine chopped fresh cilantro 1 tb Tequila; to finish Melt butter in pan with oil. Saute onions and crushed red pepper lightly then add shrimp. Continue to saute until shrimp turn a pink color. Flame with the tequila remove the shrimp from pan and cover. Add the lime zest and heavy cream to the pan then reduce the sauce over medium heat. The sauce should boil lightly and begin to thicken a little. Return shrimp to pan add seasoning to taste and lime juice with a splash of tequila and add cilantro then warm to finish.
