      Title: Chocolate Tapioca Pudding
 Categories: Puddings, Dairy, Desserts, Chocolate
      Yield: 6 Servings
 
      3 c  Milk; chocolate if you wish
      3 tb Quick-cooking tapioca
      1 lg Egg; beaten
    1/2 c  White sugar
    1/2 c  Chopped chocolate *
      3 tb Unsweetened cocoa powder
      1 ts Vanilla extract
 
  * dark, semi-sweet or milk chocolate - your choice.
  
  Mix the milk, tapioca, egg, and sugar together in a
  saucepan until the sugar has dissolved; allow to stand
  for 5 minutes.
  
  Whisk in the chocolate and cocoa powder.
  
  Place over medium heat, bring to a boil, whisking
  constantly, and let boil for 2 minutes.
  
  Remove from heat and whisk in the vanilla extract. Allow
  to cool for 20 minutes. Serve warm or chilled.
