MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Confetti Couscous Salad
 Categories: Pasta, Squash, Vegetables, Herbs, Cheese
      Yield: 12 servings
 
      2 c  Water or broth
     10 oz Couscous
    1/4 c  Olive oil
      2 tb Fresh lemon juice
      2 lg Tomatoes; chopped
      1    Zucchini; chopped
    1/2 c  Fresh basil; chopped
      3    Green onions; thin sliced
    1/2 ts Garlic powder
      1 ts Salt
    1/2 ts Black pepper
      4 oz Crumbled feta cheese
 
  In a medium saucepan, bring water or broth to a boil
  over medium-high heat. Stir in couscous, cover and
  remove from heat; let stand 5 minutes.
  
  Lightly fluff couscous and place in a large bowl to
  cool.
  
  Add remaining ingredients except cheese; mix well. Chill
  at least 2 hours, or overnight.
  
  Stir in cheese just before serving.
  
  SERVES: 12
