      Title: Bite-Sized Crab Cakes
 Categories: Seafood, Herbs, Breads, Sauces
      Yield: 24 servings
 
      1 lg Egg
      1 tb Mayonnaise
      1 ts Dijon mustard
      1 ts Old Bay seasoning
      8    Saltine crackers
      1 lb Jumbo lump crabmeat
 
  Set oven # 350ºF/175ºC.
  
  Coat a baking sheet with cooking spray.
  
  In a large bowl, lightly beat the egg. Add mayonnaise,
  mustard, seafood seasoning, and crushed crackers; mix
  well.
  
  Gently stir in crabmeat until thoroughly combined. Shape
  mixture by tablespoonfuls into 24 patties and place on
  prepared baking sheet.
  
  Bake 12 to 15 minutes, or until lightly browned. Serve
  as is or with Mustard Dipping Sauce (separate recipe).
  
  MAKES: 2 dozen
