March 25 - National Lobster Newburg Day

MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Lobster Newburg
 Categories: Seafood, Dairy, Wine, Breads, Chilies
      Yield: 4 Servings
 
      2 ts Butter
      1 tb All-purpose flour
    1/4 ts Salt
  1 1/2 c  Cream
      2 lg Beaten egg yolks
      8 oz Cubed, cooked lobster
      1 tb Dry sherry
    1/8 ts Pepper
        ds Ground red pepper
      2    English Muffins; split,
           - toasted
           Snipped fresh chives (opt)
 
  In a medium saucepan melt butter. Stir in flour & salt.
  Add the milk all at once. Cook & stir until thickened
  and bubbly. Cook and stir 1 minute more.
  
  Stir about half of the hot mixture into the beaten egg
  yolks. Return all to saucepan. Cook and stir until
  mixture is thickened and bubbly.
  
  Stir in lobster, dry sherry, white or black pepper,
  and ground red pepper.
  
  Heat through. Serve over English muffin halves. If
  desired, garnish with snipped chives.
  
  Makes 4 servings.
