February 22: National Cook a Sweet Potato Day

      Title: Michael Jackson's Sweet Potato Pie

      Yield: 6 servings
 
      3 lg Eggs
    1/2 c  White sugar
    1/4 c  Butter; melted
    1/2 ts Salt
    1/3 c  Milk
      1 ts Vanilla extract
      1 ts Ground cinnamon
      1 ts Ground nutmeg
  2 1/2 c  (generous) sweet potatoes;
           - fresh or canned
      2 tb Fresh lemon or orange juice
      1    (9") pie shell; unbaked
    1/2 c  Pecan halves
 
  Beat eggs and sugar. Add melted butter, salt, milk,
  vanilla, and spice. Blend egg mixture with mashed
  sweet potatoes and lemon or orange juice.
  
  Pour into unbaked pie shell or greased 1 1/2 quart
  baking dish. Garnish with pecan halves if desired.
  
  Bake in a 400ºF/205ºC oven 10 minutes. Reduce oven
  temperature to 375ºF/190ºC; bake 40 minutes longer
  or until golden.
