Subj : 2/3 Carrot Cake Day - 4 To : All From : Dave Drum Date : Tue Feb 01 2022 13:17:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Joey Gerard's Carrot Cake Categories: Cakes, Vegetables, Fruits, Cheese, Nuts Yield: 12 servings 2 c + 2 tb flour 1 3/4 c Granulated sugar 1 ts Salt 1 tb Ground cinnamon 2 1/2 ts Baking soda 1/8 ts Ground ginger 1/4 ts Ground nutmeg 1 1/2 c Corn oil 4 lb Eggs 3 c Shredded carrots 1/2 c Raisins 1/2 c Chopped walnuts MMMMM--------------------------FROSTING------------------------------- 8 oz Cream cheese; room temp 4 tb Unsalted butter; room temp 3 3/4 c Powdered sugar 1 tb Vanilla extract Set oven @ 350ºF/175ºC. In a medium bowl, sift together dry ingredients. In a large bowl, whisk together the oil and eggs. Add dry ingredients to egg mixture and whisk until smooth. Fold in carrots, raisins and walnuts. Pour batter into 13" by 9" baking pan coated with vegetable oil spray and bake 35 to 40 minutes or until toothpick inserted into center comes out clean. Let cool completely. PREPARE FROSTING: In bowl using electric mixer, cream together cream cheese and butter until smooth. Add powdered sugar in stages, scraping down side of bowl often to avoid lumps. Mix in vanilla.
