October 21: National Pumpkin Cheesecake Day

      Title: Iris' Pumpkin Cheesecake

MMMMM---------------------------CRUST--------------------------------
      1 c  (240 ml) Graham Wafer
           - crumbs
    1/4 c  (60 ml) Oreo Baking Crumbs
      2 ts (30 ml) sugar
    1/3 c  (75 ml) butter; melted

MMMMM--------------------------FILLING-------------------------------
  1 1/2 c  (360 ml) canned pumpkin
    1/4 c  (60 ml) brown sugar
    1/2 ts (2.5 ml) ground cinnamon
    1/2 ts (2.5 ml) nutmeg
    1/2 ts (2.5 ml) ginger
     24 oz (750 g) cream cheese;
           - softened
     10 oz (300 ml) can Eagle Brand
           - sweetened condensed milk
      3 lg Eggs
 
  Set oven to 325ºF/165ºC.
  
  Combine crumbs, sugar and butter; press into bottom of
  9" (23 cm) springform pan.
  
  Whisk together pumpkin, brown sugar and spices; set
  aside.
  
  Beat cream cheese until fluffy; gradually beat in
  sweetened condensed milk, eggs and reserved pumpkin
  mixture. Pour into prepared pan.
  
  Bake on middle rack of preheated oven for 50 minutes or
  until centre is just set.
  
  Cool thoroughly and chill overnight. Garnish as desired.
