October 18: National Chocolate Cupcake Day

MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Brownie Genius Oreo Cups
 Categories: Cookies, Snacks, Desserts, Chocolate
      Yield: 14 servings
 
    1/2 c  Unsalted butter
    1/2 c  Cocoa
      1 c  Sugar
      2 lg Eggs
    1/2 c  AP flour
      1 ts Salt
    1/2 ts Vanilla extract
           Chocolate chip cookies
 
  For this recipe you don't need a mixer.
  
  Set oven @ 350ºF/175ºC.
  
  Line a 6 cup muffin tin with cupcake liners.
  
  Melt 1/2 cup butter and 1/2 cup cocoa on low heat.
  
  Add 1 cup sugar and stir constantly for 5 minutes.
  
  Remove from heat and cool for 5 minutes.
  
  Add first egg and mix well.
  
  Add second egg and mix well.
  
  Then add 1/2 cup flour, 1 tsp salt and 1/2 tsp vanilla
  extract.
  
  Mix well all ingredients by hand.
  
  Make chocolate chip cookies according the recipe you
  selected.
  
  Now, let's bring all different players into the one.
  
  In each cupcake liner add an Oreo.
  
  Top with a tablespoon size ball of chocolate chip
  cookie.
  
  Top with another Oreo.
  
  Pour over brownie batter using cookie scoop of 2 oz +
  1TBSP cookie scoop.
  
  Bake for 23 minutes.
  
  Use a toothpick to check if it is done. (for the
  brownies if it comes out almost clean, it is done)
  
  Cool it.
