Subj : 9/23 Key Lime Pie Day 5 To : All From : Dave Drum Date : Tue Sep 21 2021 17:22:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Cross Creek Key Lime Pie Categories: Pies, Desserts, Dairy, Citrus, Booze Yield: 6 Servings 14 oz Can Eagle Brand sweetened - condensed milk 1/3 c Key Lime juice; fresh or - bottled 3 Egg yolks; beaten 1 1/2 ts 151 proof rum 1 (9") graham cracker crust 1/2 ts Cream +=WHIPPED WITH=+ 2 tb Confectioner's sugar +=AND=+ Zest of 6 Key Limes ds Orange bitters 1 tb Rum Use an electric mixer and beat the egg yolks until they are thick and turn to a light yellow, don't over mix. Turn the mixer off and add the sweetened condensed milk. Turn speed to low and mix in half of the lime juice. Once the juice is incorporated add the other half of the juice and the zest, continue to mix until blended (just a few seconds). Pour the mixture into the pie shell and bake @ 350ºF/ 175ºC for 12 minutes to set the yolks and kill any salmonella in the eggs.
