Subj : BH&G 3604 To : All From : Dave Drum Date : Fri Aug 13 2021 00:42:12 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Quick Breakfast Migas Categories: Pork, Vegetables, Breads, Dairy, Cheese Yield: 4 Servings 1/2 lb Bulk pork sausage 3 (6") corn tortillas; in 3/4" - pieces 1/3 c Chopped red sweet pepper 1/3 c Chopped onion 2 tb Diced green chilies 6 lg Eggs; lightly beaten 1/2 c Shredded queso Oaxaca, queso - Chihuahua, or cheddar - cheese 1/2 c Bottled salsa; more for - topping 1 Avocado; chopped 1/2 c Sour cream Bottled salsa In a large nonstick skillet cook sausage over medium heat about 5 minutes or until brown, using a wooden spoon to break up meat as it cooks. Drain off fat. Add tortillas, red sweet pepper, onion, and green chile peppers and cook about 5 minutes or until onion is tender. Add egg and cook, without stirring, until egg begins to set on bottom and around edges. With a spatula or large spoon, lift and fold the partially cooked egg so the uncooked portion flows underneath. Cook for 2 to 3 minutes or until egg is cooked through but is still glossy and moist. Fold in cheese and 1/2 cup salsa. Immediately remove from heat.
