Subj : BH&G 3582 To : All From : Dave Drum Date : Wed Aug 11 2021 05:01:00 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Spicy Brazilian Turkey Soup Categories: Poultry, Chilies, Beer, Vegetables, Nuts Yield: 6 Servings 1 ts Oil 1/2 c Fine chopped onion 3 cl Garlic; minced 1 md Fresh jalapeno chile pepper; - seeded, fine chopped 1 tb Minced fresh ginger 28 oz Can no-salt-added diced - fire-roasted tomatoes; - undrained 12 oz Bottle beer 1 c Chicken broth 1/4 c Unsalted dry roasted - peanuts 3 c Shredded cooked turkey - breast 1/2 c Unsweetened light coconut - milk 1/2 c Snipped fresh cilantro 1/3 c Snipped fresh parsley 1 tb Lime juice 1/2 ts Ground black pepper 1/4 ts Salt Snipped fresh cilantro - (opt) In a large Dutch oven heat oil over medium heat. Add onion and garlic; cook and stir for 2 minutes. Add jalapeno pepper and ginger; cook and stir for 30 seconds more. Add tomatoes, beer, and broth. Bring to boiling; reduce heat. Simmer, covered, for 20 minutes. Meanwhile, place peanuts in a coffee grinder or a heavy resealable plastic bag. Process or crush with a rolling pin until finely ground. Stir ground peanuts, turkey, and coconut milk into tomato mixture. Bring to boiling; reduce heat. Simmer, uncovered, for 5 minutes, stirring occasionally. Stir in 1/2 cup cilantro, parsley, lime juice, black pepper, and salt. Simmer, uncovered, for 5 minutes more. If desired, garnish each serving with additional cilantro.
