Subj : St. Clare 01 (Assisi) To : All From : Dave Drum Date : Tue Aug 10 2021 19:56:54 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Clare's Frim Fram Sauce Categories: Condiments, Dips, Chilies, Vegetables Yield: 1 Cup 2/3 c Dried chile flakes 1 1/2 c Water 1 c Oil 10 cl Garlic; minced 1 1/2 tb Sugar (opt) 1/2 ts Salt Pour the water over the chile flakes and bring to a boil over high heat. Reduce to medium and cook until all the water boils away. Then stir over medium heat until the chile dries out. (If you like a smoky flavor, continue stirring over medium heat until they start to darken.) Remove from heat and add garlic, (optionally sugar), salt, and oil. Bring to a boil over high heat. Turn off the heat and let sit for 5 minutes. Then cook over medium heat for 5 minutes more. When thoroughly cool, pour into a jar and refrigerate. Stir before using. Poster's notes: I used it to marinate steak and put it on my mashed potatoes. It would be very good as a dipping sauce for egg rolls or pot stickers as well.
